He grew up in coffee, like a lot of folks in this region did. What sets Oscar apart isn't where he started. It's what he's decided to do with it.\u003c\/p\u003e\u003cp\u003eFinca Los Altares is 2.5 productive hectares, sitting at 1,696 meters close enough to a river that the water access shapes how the farm is laid out. Oscar runs the farm with his mother, Omaira Quintero. The two of them grow coffee and plantains together. The plantains give shade to younger coffee plants in a small-scale intercrop that's common in Huila but takes real attention to manage well. Annual yield is around 4,750 kilograms of dried parchment, which is modest on purpose. At that scale, Oscar can sort cherries carefully, separate lots, and process on his own terms.\u003c\/p\u003e\u003cp\u003eThe story of this coffee begins a few years back. Oscar joined Proagromil, a cooperative of about 90 producers in Monserrate pushing for better quality and better access to specialty markets. That decision changed how he farmed. He built a dedicated drying station on the farm so he wouldn't have to share space with other producers. He built a proper processing area. He built a composting system so the pulp and mucilage cycle back into soil health instead of becoming waste. Their brand, Diwan Coffee, launched in November 2024, and this Geisha is the second coffee they've sent us this year, after their washed Papayo earlier on.\u003c\/p\u003e\u003cp\u003eEl Mirador sits at 1,750 meters above sea level, and the whole place is small enough that Yessica and Diego know every variety on it by name. Alongside Geisha, they grow Caturra, Pink Bourbon, Bourbon Aji, Papayo, and Sidra, treating each one as its own project with its own profile. They've got six people working the farm with them, and harvest runs from October through January, which is later and slower than coffees grown lower down. Up there, cherries get more time on the branch before anyone picks them, and that shows up in the cup.\u003c\/p\u003e\u003cp\u003eWith a Natural process, every step matters, and Yessica and Diego are careful about all of them. Cherry selection comes first. Only the ripest go in, since whatever doesn't make it past that stage isn't going to fix itself later. The whole cherries spend 60 hours fermenting in open tanks, then move to the drying area, where the temperature stays steady for about twenty days. Drying that slowly, with the temperature held in check, lets the sugars in the cherry settle into the bean instead of going volatile the way fast, sun-only Naturals sometimes do. You end up with a cup that's intense and structured at the same time.\u003c\/p\u003e\u003cp\u003eIn the cup, currant and rhubarb tart lead the way, with violet running underneath, and the body is juicy and velvety while the acidity stays vibrant and punchy. It comes from many small plantations on the Kuta Ridge, with farmers walking cherry down to the wet mill from plots scattered around 1,585 meters in volcanic, mineral-heavy soil. Kuta pays a premium to producers who deliver consistent ripe cherry, which sounds simple but is the actual hinge the whole quality story turns on. The bonus rewards the slow, careful work of selective picking, and the mill gets a more even raw material to work with as a result.\u003c\/p\u003e\u003cp\u003eProcessing happens in two stages at the Kuta complex. At the wet mill, cherry moves through a three-stage washing process and then dries on raised beds in the sun. After drying, the lot moves to the Kuta Dry Mill for conditioning, density sorting, screen sizing, color sorting, and a final hand selection. This particular lot is then separated into peaberries, the natural mutation where only one round seed develops in the cherry instead of the usual two halves. Half of it is coffee. The other half is a protected nature reserve, kept that way on purpose so the wind moves gently through the trees and the cherries develop slowly. They have four people working the farm with them, and a fifth, sixth, and seventh variety of coffee growing on the property if you count what's in the ground beyond this lot. The Caturra and Castillo that make up this release were hand-picked at about 95 percent ripeness, which is the level Carolina trusts to carry a long ferment.\u003c\/p\u003e\n\n\u003cp\u003eThe processing is where the patience lives. The cherries go into open stainless steel tanks intact, no depulping yet, and they sit there for 140 hours, just under six days. Twice a day, every day, Carolina and Maria Victoria pour coffee juice back over the lot and mix it through so the fermentation stays even from top to bottom. Then the cherries are depulped, and the beans are moved to open patios where they dry in the sun for up to three weeks with most of the mucilage still on them. That mucilage is the difference between this and a washed coffee. It is also the difference between a standard honey and a Black Honey: the longer drying time and the heavier mucilage load are what concentrate the sugars and make a Black Honey what it is.\u003c\/p\u003e\n\n\u003cp\u003eWhat you get is a cup that drinks like dessert with an edge.
