His brother gifted him the first Chiroso seeds and taught him everything about growing and processing. Today Arnulfo and his wife Martha Cartagena manage Finca Hoyo Rico together on two hectares in the village of Guintar, just outside Anzá, at 2,100 meters above sea level. Martha handles processing and drying while Arnulfo and their older children manage the farm. It's a true family operation, still young and already producing coffee that's getting attention.\u003c\/p\u003e\n\u003cp\u003eThe washed process here takes advantage of the altitude. Cherries ferment for four days before depulping, then undergo an additional eight-day fermentation. At 2,100 meters, cooler temperatures slow fermentation down, which lets more complexity develop without introducing off flavors.
