Kuta is run alongside a working cooperation between the Ulga and Kolga tribes, who were historically in conflict, and the mill is widely credited with bringing a lasting peace between them.\u003c\/p\u003e\u003cp\u003eThe coffee here doesn't come from a single farm. It comes from many small plantations on the Kuta Ridge, with farmers walking cherry down to the wet mill from plots scattered around 1,585 meters in volcanic, mineral-heavy soil. Kuta pays a premium to producers who deliver consistent ripe cherry, which sounds simple but is the actual hinge the whole quality story turns on. The bonus rewards the slow, careful work of selective picking, and the mill gets a more even raw material to work with as a result.\u003c\/p\u003e\u003cp\u003eProcessing happens in two stages at the Kuta complex. At the wet mill, cherry moves through a three-stage washing process and then dries on raised beds in the sun. After drying, the lot moves to the Kuta Dry Mill for conditioning, density sorting, screen sizing, color sorting, and a final hand selection. This particular lot is then separated into peaberries, the natural mutation where only one round seed develops in the cherry instead of the usual two halves. Peaberries tend to come through the roaster denser and concentrate sweetness more cleanly than their flat-bean siblings.\u003c\/p\u003e\u003cp\u003eIn the cup, this one pours like cooling crème brûlée, with caramelized brown sugar at the top, a malty middle that reminds us a little of horchata, and a soft dandelion root finish that gives it some grown-up bitterness without ever turning sharp.
