As a Biochemical Engineer who grew up surrounded by coffee, Andres spent time at Tecnicafé (a Cauca research institute) and later at Finca El Paraíso, where he worked on soil studies and process standardization. Now running his own project across two farms in Cauca, he's applying that technical background to producing exceptional coffees like this Gesha.
His semi-washed process is methodical and intentional. After hand-picking and sorting (ensuring 95% fully ripe cherries), the coffee undergoes a 48-hour fermentation with beer yeast to enhance oxidation and stabilize flavors. The beans are then depulped and fermented in mucilage for 24 hours with constant stirring every 3-4 hours to ensure even development. Drying happens in two careful phases: seven days at lower temperature, followed by 2-3 weeks at slightly higher heat (always below 40°C) until the beans reach 12% moisture. The result is an exceptionally sweet and creamy coffee with bright floral aromatics and balanced structure.
Andres now owns two farms in Cauca growing varieties like Gesha, Chiroso, Pink Bourbon, and Sidra. He's also established cherry collection points in Nariño and Cauca to increase volume while maintaining his quality standards. His mission is straightforward: ensure his processing methods reach larger markets without sacrificing the attention to detail that makes his coffees distinctive.

- French Press — Coarser grind for traditional French Press brewing, cold brew, or large-batch Chemex (60+ grams of coffee). The larger grind size prevents over-extraction during longer steep times.
- Cold Brew — Coarse grind optimized for cold brew methods with extended steeping (12-24 hours). Similar to French Press but dialed in for cold water extraction.
