Andres runs La IlusiĂ³n in Santa BĂ¡rbara as a processing center for his whole neighborhood, buying cherry from the growers around him and fermenting it himself. This lot spends four days in a tank with coffee juice and cherry pulp. That's where the pomegranate and cherry licorice come from, with a little cacao sitting underneath.
