Why put salt on a sweet latte?
Praline is a close cousin of salted caramel, and the salt is doing the same job here. A pinch of coarse pink Himalayan salt sitting on top of the foam hits your tongue before the sweetness does, which sharpens the pecan and keeps the drink from reading as one flat note of sugar. Use coarse, not fine. You want to taste individual crystals, not a salty latte.
Can I make this iced?
Yes, and it's good iced. The one step you can't skip is pulling the espresso directly over the pecan syrup and white mocha sauce and stirring hard before anything cold goes in. Mocha sauce is thick and it will not dissolve once the drink is cold. Once it's fully combined, pour it over ice and add cold milk.
What milk works best?
Whole dairy steamed to 150 to 155°F is what we pour in the cafes, since the fat carries the buttery pecan note. Oat milk is the best non-dairy option here and keeps the body creamy. Skim and 2 percent will taste thin against the syrup and the mocha sauce.
