Is this made with peppermint or spearmint?
Spearmint. Our Mint Coffee Syrup has roughly 0.5 percent menthol against peppermint's 40 percent, so the cooling is gentle and the flavor sweeter and brighter. That's exactly what makes the drink read as a Thin Mint cookie instead of a candy cane. If you sub in peppermint, you'll get something closer to a peppermint mocha than a cookie.
How do you make chocolate cold foam at home?
Whisk ½ cup of cold half and half with 1 teaspoon of unsweetened cocoa powder and a small splash of vanilla syrup until it thickens and holds soft peaks. A handheld milk frother is easiest. The cocoa adds the chocolate note, the vanilla rounds it out, and the cream is what makes it float on top of the cold brew.
Can I add a crushed cookie on top?
Yes. A crushed chocolate wafer or mint cookie scattered over the foam doubles down on the cookie reference and adds texture. Skip the marshmallows here. They'd push the drink toward s'mores and away from the cookie profile.
