How do you express a citrus peel?
Use a vegetable peeler to remove a 2 to 3 inch strip of citrus peel. Hold the peel between your thumbs and forefingers with the colorful zest side facing down over the drink. Gently squeeze the edges of the peel toward each other and twist. You'll see a fine spray of citrus oil land on the surface. Rub the peel around the rim of the glass and drop it into the drink for a splash of color.
Why fill the cup with ice first?
When you're making iced drinks at home, fill your cup with ice first, then build the drink in a pitcher and pour it over. Pouring warm or room-temperature syrup directly onto ice melts a chunk of it before the drink even reaches the cup, and you end up with something watered down by the third sip.
Can I make this with whole milk?
We don't recommend it. The lemon juice will curdle dairy milk, especially when the cold brew and milk are both cold. Stick with oat. It stays creamy against the lemon without breaking.
