Spearmint or peppermint, what's the difference?
Our Mint Coffee Syrup is spearmint, which has roughly 0.5 percent menthol versus peppermint's 40 percent. That means the cooling is gentle and the flavor sweeter and brighter, which is exactly right for a mojito. Peppermint would push this drink into candy-cane territory and clash with the lime. Stick with the Mint Syrup for this one.
How do you express a lime peel?
Use a vegetable peeler to remove a 2 to 3 inch strip of lime peel. Hold the peel between your thumbs and forefingers with the colorful zest side facing down over the drink. Gently squeeze the edges of the peel toward each other and twist. The oils that mist out are what give the drink its fresh, fragrant top note.
Why oat milk and not regular milk?
Oat milk is the most stable option against the acid in lime juice. Whole milk can curdle if the lime hits it too hot or sits too long. Skim and 2 percent break even faster. If you want to use dairy, whisk the lime juice into the cold brew first, then add cold whole milk last.
