COLOMBIA CAROLINA RAMIREZ BLACK HONEY

From Carolina Ramirez and her mother Maria Victoria at San Antonio, their 8-hectare farm in Andes, Antioquia, where half the land is held back as a nature reserve. This is Carolina's first experimental process: 140 hours of in-cherry fermentation, then patio dried for three weeks. We taste brownie batter, bourbon cherries, and Raisinets. A syrupy body paired with a citric, boozy lift.
